Chocolate Chia Mousse
Ingredients:
4 Cups Coconut Milk
1 tsp Vanilla Extract
3/4 Cups Bittersweet Chocolate
2 TBS Honey or Maple Syrup
3/4 Cups Chia Seeds
Instructions:
1. Combine coconut milk and vanilla, mix until smooth and set aside.
2. Melt Chocolate and honey or maple syrup over double boiler just until melted.
3. Whisk coconut milk into chocolate mixture until completely combined. Stir in chia seeds then place in refrigerator to set for at least 6 hours or overnight.
4. Garnish with berries, shaved chocolate or toasted coconut if desired.
Note: Will hold in the fridge for up to 5 days.
Prep time: Approx. 20 minutes
Yields: Approx. 6 Servings
